Simple chicken brine

  • 0.5 cup(s) Kosher salt (1/3 if using regular salt)
  • 0.67 cup(s) Light brown sugar
  • 1 gallon(s) Cold water

Simple chicken brine Directions

  1. Mix all ingredients well -until salt and sugar are disolved
    Place 1 whole chicken (or chicken pieces) in brine.
  2. Cover and put in the refrigerator for 2-4 hours. The chicken can stay in the brine as long overnight. You can also use less water and then add a bunch of ice to keep it cool for the 2-4 hours.
  3. Remove chicken from brine, rinse chicken well, and pat dry with paper towel.
  4. Discard brine solution.
  5. Prepare the chicken with any recipe you chose.
  6. You can also use this recipe for turkey brine.  Obviously you will need to increase the volume of the brine while keeping the salt to water ratio the same. A clean 5 gallon bucket or a cooler work great for brining turkey. Also, I recommend brining turkey overnight or longer -upto 24 hours.  Make sure to keep the water temp around 4 C by making sure there always some ice in the brine.
